The medicinal qualities of honey have been known since antiquity, which is why it has been called „living food”. Acacia honey is easily assimilated by the body, providing energy and bioactive and nutritious substances.

What does acacia honey contain?

Among the many types of honey, each with its specific properties, acacia honey is a general tonic, which soothes coughs and is used to treat asthenia and neurosis.

Acacia honey contains vitamins B1, B2, B6, B12, enzymes, flavones, flavonoids, aromatic compounds, phytohormones, organic acids (lactic, oxalic, citric, malic), dextrin, nitrogen compounds.

It has a higher fructose content than other types of honey (41.7%) and contains 10% sucrose and maltose and 34.7% glucose, with a pH of 4. In total, acacia honey contains 435 substances.

Acacia honey is monoflora, which means that it was mostly harvested from a single plant species – in this case acacia.

Characteristics of acacia honey

The color of acacia honey, immediately after harvest, is transparent, but depends on the honeycombs in which it was made. Thus it can have shades from colorless to straw yellow or light yellow.

Acacia honey has a pleasant, sweet taste, is viscous and fluid and shows no signs of crystallization when fresh. Crystallization is a natural process and depends on the ratio between glucose and fructose in the honey component and the ambient temperature. Due to a large amount of fructose, it does not crystallize until a year and a half and two years, but not completely then.

The smell is specific. We must keep in mind, however, that the pronounced smell of acacia is a sign of counterfeiting honey by introducing an infusion of acacia flowers.
